Vinificazione
L’uva viene pressata intera vinificando separatamente le diverse parcelle di vigneto che vengono sapientemente assemblate a gennaio. La base spumante matura in acciaio sui lieviti con periodici batonnage fino alla presa di spuma che avviene a tarda primavera. Le bottiglie vengono accatastate in un locale interrato e vi rimangono 36 mesi. Remuage manuale con cesti esagonali. Dopo la sboccatura segue un periodo di riposo di alcuni mesi.
Note di degustazione
Al naso pan brioche, nocciola tostata e note sulfuree. Al palato la bollicina è delicata e il gioco tra sapidità e freschezza lo rende unico e affascinante.
