Vinificazione:
raccolta manuale dell’uva nell’ultima decade di agosto e mese di settembre. Vinificazione in bianco con
pressatura soffice dell’uva e successiva fermentazione in acciaio. Fermentazione malolattica parziale.
Tiraggio:
dopo almeno sei mesi di affinamento sui lieviti in cantina avviene la rifermentazione in bottiglia. Segue un lungo affinamento sui lieviti in bottiglia.
